Walnut Chicken Recipe

4 whole broiler-fryer chicken breasts -- skinned, boned, cut
3 tablespoons cornstarch -- divided
3/4 teaspoon --
5 spice powder
1/4 teaspoon salt
4 tablespoons salad oil -- divided
1 cup walnuts
1 tablespoon grated fresh ginger root
1 clove garlic -- crushed
1/4 cup dry sherry
3 tablespoons soy sauce
1 teaspoon sugar
1/4 cup chicken stock (or bouillon)

In medium bowl, mix together 1 tablespoon of the cornstarch, 5-spice
powder and salt. Add chicken strips and toss to coat well; let stand 10
minutes.

In a heavy skillet or wok, place 2 tablespoons of the salad oil over
medium high heat. Add walnuts and brown, being careful not to burn.

Remove walnuts with slotted spoon and drain on paper towels. Add remaining
2 tablespoons of the oil to skillet or wok; add ginger root and garlic and
stir-fry 1 minute.

Add chicken and cook over high heat, stirring constantly until chicken is
no longer pink, about 2 minutes. In small bowl, mix together sherry, soy
sauce, sugar, chicken stock and the remaining 2 tablespoons of cornstarch.

Stir until smooth. Add cornstarch mixture to chicken, stirring constantly
over high heat until sauce is thickened and translucent. Sprinkle with
walnuts. Serve on bed of steamed fresh broccoli.




West African Chicken Soup Stew Chicken Recipe

1 1/2 pounds chicken -- cut up
1 onion -- chopped
1 pound mushrooms -- chopped
1 bunch collard greens -- or spinach or other
6 ounces tomato paste
west African red pepper
salt

Stem and chop greens. Put chicken, onion and mushrooms in soup pot. Add
enough water to just barely cover ingredients. Turn on medium-high heat.
Cover and cook while you're washing and chopping the greens, about 10
minutes. Add salt, red pepper and tomato paste. Boil for about another 5
or 10 minutes. Add greens and replace lid, steaming greens and stirring
them in. Variations: sometimes we add some exotic ingredients like smoked
fish and/or ground egusi (which is a kind of melon seed), but it's
perfectly tasty without these additions. This is traditionally served with
"fufu" which is a doughy starch made variously from gari (roasted,
fermented, ground cassava), or from semolina flour or from various
combinations of Bisquick, potato Buds, potato starch, etc. It's also good
over rice.



West African Lemony Chicken-okra Soup Chicken Recipe

2 x Juice of 2 Lemons
1 x Broiler chicken, (2 1/2 lbs)
6 c Chicken broth or Water
1 x Lge Onion, peeled & chopped
3 x Tomatoes, peeled & choppped
1 cn Tomato Paste (6 oz.)
2 c Sliced Okra (or 1 can 15 oz)
1/3 c Uncooked long grain Rice
2 t Salt
1/4 t Pepper
1/2 t Ground Red Pepper
1 t Ground Tumeric

Cut up broiler-fryer chicken. If using can of Okra, drain it well. Rub
lemon juice over chicken pieces. Put in a large kettle with chicken
broth or water. Bring to a boil. Lower heat and cook slowly, covered,
12 minutes. Add remaining ingredients and continue to cook slowly
about 30 minutes, until chicken and rice are tender. Remove chicken
pieces and debone. Cut meat into small pieces and return to kettle.
Serves 4 to 6.


White Bean Chili Chicken Recipe

1 c Onion -- Chopped, 1 Large
1 ea Clove Garlic -- Finely Chopped
1/4 c Margarine Or Butter
4 c Chicken -- Cooked, *
3 c Chicken Broth
2 T Cilantro -- Fresh, Snipped
1 T Basil Leaves -- Dried
2 t Red Chiles -- Ground
1/4 t Cloves -- Ground
32 oz Great Northern Beans -- 2 Cans
-----GARNISHES-----
3/4 c Tomato -- Chopped, 1 Medium
1 x Blue Or Yellow Corn Tortilla
1 x Chips.

* Chicken should be cut into 1/2-inch Cubes.

~-- Cook and stir onion and garlic in margarine in 4-quart Dutch oven
until onion is tender. Stir in remaining ingredients except chopped
tomato and tortilla chips. Heat to boiling; reduce heat. Cover and
simmer for 1 hour, stirring occasionally. Sterve with tomato and
tortilla chips.



Williamsburg Chicken - as Served at London Town - Chicken Recipe

1 ea Envelope unflavored gelatin
2 c Celery, diced
4 c Chicken, cooked, diced
1/2 c Stuffed olives, sliced
1 c Canned peas, drained
2 T Lemon juice
1 1/2 c Mayonnaise
1 x Salt & pepper to taste
1/3 c Pecans, chopped
1/4 t Leaf thyme
2 ea Eggs, hard cooked, chopped
1 1/2 c Chicken broth
1 x Green grapes for garnish
1 x Oil

Oil a 10" X 13" pan. Soften the gelatin in a little cold water or
chicken broth. Place over low heat and stir until it dissolves. Cool
and stir in lemon juice, salt, pepper and thyme. ix well into the
broth and mayonnaise. Add all other ingredients (except grapes) and
pour into pan. Place in refrigerator overnight or for several hours
until set. Decorate with halved grapes and serve over salad greens.


Wine and Herbs Chicken Recipe

1/2 teaspoon Garlic salt

Wash chicken and cut up. In small amount of oil, brown chicken pieces on
all sides. Pour off excess oil. Add wine and seasonings. Cover and simmer
for 30 to 40 minutes or until chicken is tender.



Wine and Tomato Sauce (poulet Marengo) Chicken Recipe

3 lb CHICKEN,CUT INTO SERVING PIE
Salt & pepper
2 tb Butter
2 tb Olive oil
1 1/2 c Mushrooms,thinly sliced
1/2 c Finely chopped onions
1/2 ts Finely minced garlic
1 Bay leaf
2 Sprigs fresh thyme
1/2 c Dry white wine
2 c Cored and diced tomato
1/4 c Tomato paste
1/2 c Chicken broth
2 Sprigs fresh parsley

1. Sprinkle the chicken with salt and pepper to taste. Heat the
butter and oil in a heavy skillet and add the chicken pieces, skin
side down. Cook until golden brown on one side, about 5 min. Turn the
pieces and cook on the other side about 2 min. 2. Pour off the fat
from the skillet, then scatter the mushrooms over the chicken. add
the onion,garlic,bay leaf and thyme and cook about 5 min. 3. Add the
wine and stir well. add the tomatoes,tomato paste,chicken broth and
parsley. bring to a boil. cover and simmer for 10 min. 4. dicard the
herbs before serving.
