Randy Farkas Jerked Chicken Recipe

1 Chicken -- 1 lb - washed and
-quartered
1/2 ts Seasoned salt
1/2 ts Garlic powder
1/2 ts Black pepper
1/2 ts Crushed chili peppers
2 ts Soy sauce, dark
Sauce:
1/2 c Breadcrumbs -- dry
1/2 ts Seasoned salt
1/2 ts Thyme
1 Onion -- large
1/2 ts Pimento seed (allspice berri
-es)
2 Garlic cloves
1 c Water

Mix seasonings and soy sauce and rub over the chicken pieces. Cover
and refrigerate overnight to marinate. The next day, bake marinated
chicken in 350F oven for 1-1/2 hours. Meanwhile, make the sauce by
blending all ingredients in blender or food processor until smooth.
When chicken has cooked for 1-1/2 hours, remove from the oven and dip
each piece in blended sauce mixture. Return chicken to oven and bake
an additional 15 minutes. Meanwhile, boil remaining sauce for 15 to
20 minutes, or until thickened. Serve hot sauce with the chicken.
Serves 4.




Red-cooked Tangerine Chicken Recipe

3 1/2 lb Frying chicken (or chicken
-parts)
1 lg Piece dried orange or
-tangerine peel
1/3 c Dry sherry
1/2 c Peanut oil
3 1/2 c Boiling water
Cornstarch paste
Flower roll for garnish
Parsley or watercress for
-garnish
SAUCE:
3 lg Slices ginger root
3 tb Hoisin sauce
2 tb Dark soy sauce
3 Whole star anise
2 lg Lumps rock sugar
1 t 5-spice powder
3 Green onions, quartered

Preparation: Rinse and soak dried peel in sherry for 1 hour. Remove
chicken neck, heart, gizzard and liver (use in stock pot). Wash
chicken and chop into large chunks. Mix sauce ingredients.

Browning: Add peanut oil to moderately hot wok. When oil is hot,
brown chicken pieces; remove pieces from oil with strainer and drain
over bowl.

Slow-cooking: Remove all oil from wok; heat to moderate. Add peel,
sherry, and sauce (remixed first); add boiling water. Bring to
simmer. Add chicken pieces. Cover and simmer for 1 hour or until
chicken is tender but still adhering to bones. When tender, remove
pieces from sauce. Transfer 1 cup of sauce, less the spices, to a
saucepan; thicken with cornstarch paste to a light gravy.

Arrange chicken pieces on large serving platter to resemble the shape
of a chicken. Place bunch of parsley or watercress at the tail, a
flower roll at the head with a piece of star anise for a beak. Pour
sauce over chicken when ready to serve.

Red Wine With Mushrooms Chicken Recipe

30 g Butter
1 1/2 kg Chicken pieces
5 Bacon rashers, chopped
12 Baby (about 300g) onions
2 Cloves garlic, crushed
1 1/2 c Dry red wine
2 1/2 c Chicken stock
1/4 c Brandy
2 T Tomato paste
1 Bay leaf
2 Sprigs fresh thyme
250 g Baby mushrooms
1 1/2 T Plain flour
2 T Water

Heat butter in pan, add chicken, cook until browned all over; drain on
paper towel. Add bacon, onions and garlic to same pan, cook,
stirring, until onions are browned and bacon is crisp. Stir in wine,
stock, brandy, paste, bay leaf and thyme.

Return chicken to pan, simmer, covered, 30 mins. Add mushrooms,
simmer, covered, 30 mins. Add mushrooms, simmer, uncovered, further
10 mins. Remove chicken from pan, stir in blended flour and water,
stir over heat until mixture boils and thickens. Return chicken to
pan, stir until heated through.




Rice and Chicken Recipe

2 cups quick cooking rice
1 1/2 cups coarsely chopped green pepper (or less as

3/4 cup thinly sliced onions
3 tablespoons vegetable oil
1/4 cup cornstarch
2 cups chicken stock
3 tablespoons soy sauce
2 cups slivered cooked chicken
3 ripe tomatoes cut in wedges

Prepare rice as package directions; keep warm. Meanwhile, cook green
pepper, onion and celery if desired in oil in covered skillet over low
heat until tender; do not let vegetables brown. Blend cornstarch with
small amount of stock, add remaining stock and soy sauce. Gently stir into
vegetables. Cook until sauce is clear and thickened. Add tomatoes; heat
through. Serve over hot rice.



Risotto Chicken Recipe

2 Zucchini -- thinly sliced
2 Green onions -- sliced
2 cups Skinned diced chicken -- cooked
1/2 teaspoon Thyme
3 cups Cooked rice
1/2 teaspoon Salt
2 tablespoons Chopped pimiento
1/4 cup Grated cheese

Cook the zucchini and onions in small amount of water until tender, about
5 to 10 min. Add other ingredients, except for cheese. Cook and stir until
heated through. Remove from heat, stir in cheese, serve.
