The free chicken recipes on this web page are: Jack Daniel's Tennessee Whiskey Chicken Recipe , Jambalaya Chicken Recipe and Jubilee Chicken Recipe Jack Daniel's Tennessee Whiskey Chicken Recipe Recipe By : Serving Size : 4 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 ea FRYING CHICKENS (2 lbs each) 1 c JACK DANIEL'S WHISKEY 1 x SALT to taste 1 x BLACK PEPPER to taste -----WHISKEY SAUCE----- 1 lb WHITE MUSHROOMS -- sliced 6 ea GREEN ONIONS -- chopped 2 T BUTTER 2 oz JACK DANIEL'S WHISKEY 2 c BROWN SAUCE* Have the butcher split two small fryers or if you prefer, buy cut-up chicken pieces. Place the chicken in a shallow pan and douse with whiskey. Sprinkle salt and pepper over the pieces; marinate for 2 hours. Soak some wood chips (they specify Jack Daniel's Barrel chips) in water--if you're using regular wood chips, I'd suggest soaking them in whiskey? While the chips are soaking, build a charcoal fire in your barbecue grill. Use the wood chips in your grill to create a good smoking fire. Broil the fryvers over the pit until well cooked. Serve with whiskey sauce. FOR WHISKEY SAUCE: Saute the mushrooms and green onion in butter until tender. Add whiskey and brown sauce and simmer until flavors have blended and the alcohol has evaporated. Keep warm until serving time. * BROWN SAUCE - To make Brown Sauce; thicken beef bouillon with cornstarch or roux. Or better yet, make it from scratch. Jambalaya Chicken Recipe Recipe By : Serving Size : 8 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 3-pound chicken, cut up Salt and pepper 2 tb Shortening 2 tb Flour 1 lb Smoked sausage 2 Medium onions, minced 3 c Peeled diced tomatoes 1 Green pepper, minced 1 Clove garlic, minced 3 c Water 1 1/2 ts Salt 1/2 ts Black pepper 1/2 ts Hot pepper sauce 2 c Rice 3 Green onions, minced 3 tb Minced parsley Season chicken with salt and pepper. In a Dutch oven, brown chicken pieces in shortening on all sides. Remove chicken; add flour and stir until light brown. Add sausage which has been parboiled for 15 minutes, drained and sliced. Stir in chicken, onions, tomatoes, green pepper and garlic. Cook, stirring constantly, for 10 minutes. Add water, salt, pepper and hot sauce. Bring to a boil; add rice. When mixture comes to a boil again, stir thoroughly to combine all ingredients. Cover and simmer 30 to 45 minutes or until rice is tender. Add green onions and parsley; stir lightly with a fork. Cover for 5 minutes longer to heat thoroughly. Yield: 8 servings. Jubilee Chicken Recipe Recipe By : Serving Size : 4 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3 lb Chicken -- cut\serving pieces 1 x Salt 1 ea Can dark, sweet cherries -- * 1/2 c Sherry 1 x Orange juice 3/4 ts Lemon rind -- grated 3 tb Cornstarch 3 tb Orange juice * 1 lb, 13 oz can, pitted cherries in syrup THIS IS AN EXCELLANT COMPANY DISH THAT'S EASY TO MAKE OFTEN FOR THE FAMILY. Sprinkle the chicken pieces lightly with salt and spread them in a single layer in a broiling pan. Broil until the skin is light gold, about 10 minutes on each side. This is an effortless low-calorie way to brown chicken. Place the chicken pieces in a large casserole. Drain the cherries and save the syrup. Add 1/2 cup sherry to the syrup and add enough orange juice to make 2 1/4 cups of liquid. Stir the lemon rind into the liquid and pour over the chicken. Bring to a boil and simmer covered over low heat until tender, about 30 minutes. STOP AT THIS POINT if the dish is being prepared a day ahead. Remove the chicken and refrigerate the chicken and cooking liquid separately overnight. Skim off the congealed fat from the surface of the liquid. Return the chicken to the liquid and reheat. Stir in the cherries. Mix the cornstarch and 3 Tablespoons orange juice together and stir slowly into the cooking liquid. Continue cooking a few minutes until the sauce thickens. Serve with rice.
