Impossible Chicken 'n Broccoli Pie Chicken Recipe

1 package frozen chopped broccoli
2 cups cheddar cheese -- shredded
1 1/2 cups cooked chicken -- cut up
2/3 cup onions -- chopped
1 1/3 cups milk
3 eggs
3/4 cup Bisquick. baking mix
3/4 teaspoon salt
1/4 teaspoon pepper

Heat oven to 400 degrees.

Grease pie plate, 10x1 1/2 inches.

Rinse broccoli under running cold water to thaw; drain thoroughly.

Mix broccoli, 2 cups of cheese, the chicken and onion in plate.

Beat milk, eggs, baking mix, salt and pepper until smooth, 15 seconds in
blender on high or 1 minute with hand beater.

Pour into plate.

Bake until knife inserted in center comes out clean, 25 to 30 minutes.

Top with remaining cheese. Bake just until cheese is melted, 1 to 2
minutes longer. Cool 5 minutes.




Impossible Chicken Parmigiana Pie Chicken Recipe

3/4 cup creamed cottage cheese -- (small curd)
1/3 cup grated parmesan cheese
1 1/2 cups cooked chicken -- cut up
1 1/4 cups mozzarella cheese -- shredded
1/2 teaspoon garlic powder
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
1 can tomato paste -- (6 oz.)
1 cup milk
2 eggs
2/3 cup Bisquick. baking mix
1/4 teaspoon pepper

Heat oven to 400. Grease pie plate, 10x1-1/2 inch.

Layer cottage cheese and parmesan cheese in pie plate.

Mix chicken, 1/2 cup of the mozzarella cheese, the garlic powder, oregano,
basil and tomato paste; spoon over parmesan cheese.

Beat remaining ingredients in blender on high speed 15 sec. or with hand
beater 1 min or until smooth.

Pour into pie plate. Bake 30 min.

Top with remaining mozzarella cheese. Bake 5 to 8 min. longer or until
knife inserted in center comes out clean. Cool 5 min.




Indian Curry Chicken Recipe

2 1/2 lb Cooked, Cubed Chicken
Water
Salt
Celery Tops
3 tb Butter
1 md Tart Apple, Peeled And Diced
1 md Thinly Sliced Onion
1 tb Curry Powder, Or More
1/3 c Raisins
1 c Chicken Broth
1/2 c Coca-Cola
3 1/2 tb Flour
1 c Half And Half
1 t Salt
1/8 ts White Pepper
Hot Cooked Rice

Rinse the chicken pieces. In a pot of boiling water, cook the
chicken with a few celery tops. Cover and simmer for about 1 hour or
until fork tender. Drain and strain the broth; reserve. Bone the
chicken and cut into 1/2 inch pieces to measure about 2-1/2 cups. In
a skillet, melt the butter. Add the apple, onion and curry powder.
Saute for 5 minutes, blending well. Stir in raisins, 1 cup of the
reserved chicken broth, and the Coca-Cola. In a bowl, mix flour with
the Half and Half, stirring until smooth. Add the salt and white
pepper to the onion apple mixture. Stir and cook over low heat until
thick and creamy. Taste for seasoning. Add the chicken and turn into
a covered container to chill overnight. Reheat in the top of a double
boiler over hot water and serve on cooked rice with a selection of
condiments; including, grated coconut, chopped peanuts, chopped raw
onions, raisins, sweet pickle relish, chutney, chow chow, andor lime

Indienne Chicken Recipe

2 pounds Chicken pieces
3 tablespoons Fresh lemon juice
3 tablespoons All purpose flour
1 teaspoon Salt
1/8 teaspoon Freshly ground pepper
3 tablespoons Oil
1 tablespoon Butter
1 large Onion -- chopped
3 tablespoons Curry powder
1/2 cup Water
1/2 cup Heavy cream
1 teaspoon Chicken stock base
2 tablespoons Candied ginger
Lime wedges (optional)

Sprinkle chicken pieces with lemon juice and let stand 30 minutes. Pat
dry.
Mix flour, salt and pepper; dredge chicken pieces to coat evenly. In a
heavy skillet with a tight lid, heat oil and butter. Cook chicken,
sprinkling with any leftover flour mixture, until browned on both sides.
Remove from skillet and set aside.
Add onion and cook until golden. Add curry powder and cook for 2 minutes.
Gradually beat in water and cream, cook until thickened. Add chicken stock
base and ginger, stir, and return chicken to skillet. Cover and simmer,
turning chicken once, for 40 minutes or until chicken in tender. Transfer
to heated platter and surround with lime wedges. Serve with rice.




Italian: Chicken Cacciatore (contadina) Chicken Recipe

2 ts Salt, divided
1/2 ts Pepper, divided
3 tb Olive oil
3 To 3-1/2 pounds chicken, 4
Breasts, 4 thighs, skin
Removed
1 c Sliced onion
1 c Sliced mushrooms
1 c Green pepper rings
2 Cloves garlic, minced
2 ts Dried oregano leaves, crush
1 t Dried basil leaves, crushed
3 1/2 c (29-oz can) tomato sauce
1 3/4 c (14-1/2 oz can) Contadina
Whole Peeled Tomatoes and
Juice
1 lb Dry pasta, cooked and
Drained, or 2 cups rice,
Cooked

Combine flour, 1 teaspoon salt, and 1/4 teaspoon pepper. Coat chicken
pieces with seasoned flour. In 10-inch skillet, heat 2 tablespoons
oil; saute chicken pieces and arrange in a 13X9X2-inch baking dish;
set aside. Add remaining oil to skillet; saute onion, mushrooms,
green pepper, garlic, oregano, and basil. Cook for 3 to 4 minutes,
stirring occasionally. Mix in tomato sauce and whole tomatoes and
juice. Simmer for 15 minutes; pour over chicken. Bake in preheated
350-degree F. oven for 30 minutes. Cover and bake for additional 15
minutes. Serve over hot pasta or rice.



Italian Oven Salsa Chicken Recipe

4 chicken leg-thigh combinations -- skinned
1 tablespoon olive oil
1 6 ounce box garlic and onion croutons -- finely crushed
1 8 ounce bott zesty Italian dressing
SALSA
2 medium Roma tomatoes -- chopped
1 small zucchini -- chopped
1 cup sliced mushrooms
1 cup chopped onion
5 1/2 teaspoons oregano leaves
1 teaspoon basil leaves
1 teaspoon garlic powder
1/2 cup freshly grated
Parmesan cheese
Tomato wedges

In large zip-lock bag, place chicken and pour dressing over chicken. Seal
bag and marinate in refrigerator 15 minutes. Remove chicken from marinade;
drain.

In shallow dish, place crushed croutons; add chicken one piece at a time,
dredging to coat. In large rectangular glass baking dish coated with olive
oil, place chicken and bake at 400 degree F for 25 minutes.

Prepare Salsa. Remove chicken from oven and spoon Salsa around chicken.
Return to oven and bake about 15 minutes longer or until vegetables are
tender crisp and fork can be inserted in chicken with ease. Place chicken
on serving platter and spoon Salsa on and around chicken. Sprinkle with
cheese and garnish with tomato wedges.

SALSA:
In medium bowl, mix together ingredients.



Italiano Chicken Recipe

14 oz Tomatoes, canned
1/2 ts Basil, dried
1/2 ts Tarragon
1/2 ts Salt
1/4 ts Pepper, freshly ground
2 ts Butter, oil or marjarine
1 Garlic clove finely chopped
2 lb Chicken pieces, skinned
2 tb Parsley chopped or 2 tsp dry
1/2 c Mozzarella cheese, shredded

Original recipe calls for chicken breast with bones. Because of the
sauce, it is easier to eat with bones removed. A good dish to make
with a whole utility frying chicken. Bones and skin can be cooked up
in a separate pot for stock.

Pour tomatoes into container of a blender or food processor. Add
basil, tarragon, salt and papper. Puree until smooth. Melt
margarine in a large frypan. Saute garlic over medium heat 1 min.
(or mix in 1/2 tsp garlic powder with other spices)

Add chicken pieces, saute, turning once or twice until golden on both
sides. Cover with tomato mixture. Bring to a boil, reduce heat and
simmer 15 min until tender. Remove chicken and place in a warm
oven-proof dish. Stir parsley into sauce and spoon over chicken.
Sprinkle with Mozzarella. Place under heated broiler 1 min just until
cheese melts.

Or place on a microwave-safe dish and melt cheese in microwave. Or
sprinkle with grated parmesan cheese and serve immediately.
