-----INGREDIENTS-----
2 tb Butter
2 tb Flour
1 c Milk -- heated
1/4 ts White pepper
1/4 ts Salt
ds Hot pepper sauce
ds Worcestershire sauce
1/2 c Light cream -- or
1/2 c -half and half
2 tb Dry sherry
2 c Diced cooked chicken
2 Egg yolks -- beaten

1. Melt butter in a sauce pan over medium heat. Stir in flour and
ocok about 2 minutes, stirring constantly, without browning.

2. Gradually whisk in milk and bring to a boil, stirring constantly,
until mixture thickens. Reduce heat to low. Add white pepper, salt,
hot pepper sauce, and Worcestershire sauce.

3. Whisk in cream. Add sherry and chicken. Season with additional
salt and white pepper to taste. Cook until hot. Remove from heat.
Whisk in egg yolks, blending well, and serve.


Hawaiian Baked Chicken Recipe

2 pounds broiler-fryer chicken pieces
Salt
Pepper
1 can pineapple -- drained, reserve
-- juice (8 to 8 1/2
-- oz.)
2 tablespoons pineapple juice -- from reserve juice
1/3 cup Heinz 57 Sauce
2 tablespoons honey

Season chicken with salt and pepper.

Place chicken in baking dish (12x7 1/2x2 inch).

Combine pineapple juice, Heinz 57 Sauce and honey. Pour over chicken.

Bake in 350 degrees oven, 1 hour or until tender; baste occasionally.

Arrange pineapple slices over chicken during last 5 - 10 minutes of
baking.






Helen's Chicken Almond Stir Fry Chicken Recipe

1/2 c Chicken stock
2 ts Soy sauce
2 ts Corn starch
1/4 ts Sugar
1 pn Pepper
-----STIR FRY-----
3/4 lb Skinned, raw chicken
4 Water chestnuts
1/2 c Bamboo shoots, diced
1/4 c Veg oil
2 sl Ginger
1/4 c Onion, diced
1/2 lb Bok choy or nappa
1/4 lb Snow peas
1/4 c Celery, diced
1/2 c Almonds, blanched
2 Garlic cloves, minced

Sauce: In a small bowl, mix half the stock with soy sauce, sugar and
pepper. In a separate bowl, combine remaining stock and cornstarch.
Set aside.

Stir Fry: Dice chicken (or pork or beef), mushrooms, cabbage, and
water Chestnuts into 1/4 inch cubes. Keep chicken separate. String
and trim peas. Combine diced vegetables, snow peas, bamboo shoots
and celery.

Heat wok over high heat til drop of water sizzles into steam. Add
oil, heat and add almonds; stir fry for about 2 min or til just
golden. With slotted spoon, remove almonds and set aside.

Reheat oil and add ginger and garlic and stir fry 30 seconds. Remove
ginger and add chicken. Stir fry for 2 minutes. Add all vegetables
and toss to coat with oil. Stir fry for 30 seconds. Add soy sauce
mix. Cover and steam for 2 minutes or til vegetables are tender but
crisp and chicken cooked through.

Stir cornstarch mix and pour into wok. Stir fry uncovered for 30
seconds or til ingredients are glazed. Transfer to heated platter
and serve topped with almonds. Serve over rice.




Helen's Curried Chicken Recipe

1 md Onion, chopped
1/2 c Celery
2 tb Flour
1 md Green pepper
1/4 c Fresh parsley
1/4 ts Pepper
3 c Cooked chicken
1/4 c Margarine
1 tb Medium curry powder
14 oz Tomatoes/ ground tomatato
1 t Salt
1 1/2 c Chicken stock *
1/3 c Raisins

* I use bovril packets

Chop onion, seed & dice pepper, chop celery and dice chicken. Saute
onion & celery in marg in large shallow pan. Saute til onion is
soft, about 5 minutes. Stir in curry and flour, cook 1 minute. Add
tomatoes, and green pepper, cook stirring often for 5 minutes. Stir
in parsley, salt, pepper & broth. Lower heat and simmer for 10
minutes. covered. Add chicken and raisins; heat through and serve
over cooked rice.




Herb-baked Chicken Recipe

1 (2 1/2-lb) chicken
3 tb Oil
1/2 ts Salt
1/8 ts Black pepper
1/4 ts MSG (optional)
1/4 ts Ground oregano
1/4 ts Ground rosemary
1/4 ts Ground marjoram

Place chicken in baking dish. Brush with oil and sprinkle with salt,
pepper, MSG, oregano, rosemary and marjoram. Bake at 450F 30 to 35
minutes.



Honey Apricot Chicken Recipe

1 Chicken -- cut up 8 pieces
3/4 ts Cumin -- dried
3/4 ts Ginger -- ground
3/4 ts Coriander -- dried
1/2 ts Tumeric
1 pn Pepper
1 pn Cinnamon -- ground
1 tb Butter
1 tb Oil -- vegetable
2 Onions -- thinly sliced
2 Garlic cloves -- minced
1/2 c Chicken stock
1/3 c Honey -- liquid
2 Lemons -- sliced
Cinnamon sticks -- optional
1 tb Cornstarch
4 Apricots -- canned - quartered

Cut chicken into 8 pieces.; remove skin. In large bowl, combine cumin,
ginger, coriander, cinnamon and pepper. Add chicken, toss to coat. In
large skillet, melt butter with oil over medium-high heat; cook
chicken for 10 - 12 minutes or till browned on all sides. Drain off
all but 1 Tbsp of the fat. Add onions and garlic, pour in 1/3 cup of
the stock and the honey, stirring and spooning over chicken. Arrange
half of lemon slices over chicken, tuck in cinnamon sticks (if
using). Bring to a boil, reduce heat, cover and simmer, basting
occasionally for 25 to 30 minutes till chicken is no longer pink
inside. Transfer chicken and cinnamon sticks to warm platter; keep
warm. Discard lemon. Over high heat, bring liquid to a boil. Blend
remaining stock with cornstarch, whisk into skillet and cook,
stirring constantly for 3 minutes or till smooth and thickened. Add
remaining lemon and apricots, heat through. Taste and adjust
seasonings.





Hopkins Country Stew Chicken Recipe

1 Frying Chicken
1 Bunch Carrots
1 Bunch Shallots
4 Large Onions
1/2 Bunch Celery
5 Potatoes -- diced
1 Small Cabbage
1 Cup Whole Kernel Corn, Frozen
1 Cup Cream Corn
1 Cup White Corn
Sugar -- amount you want
Salt And Pepper -- to taste

Cover fryer with water and simmer until meat falls off bone. Remove bone
and skin and cut meat into small pieces. Return to pot.

Add remaining ingredients and cook until vegetables are tender.

Season to taste.



Hot Chicken and Artichoke Spread Chicken Recipe

2 c Chopped cooked chicken
14 oz Artichoke hearts -- drained

1 c Mayonnaise
1 c Parmesan cheese -- grated
1 Garlic clove, crushed
ds Cayenne pepper

Preheat oven to 350F. Mix all ingredients together. Spoon into a
buttered gratin dish. Bake until mixture is hot and bubbling. Serve
with corn or tortilla chips for dipping.




1 Hot Chicken Salad Chicken Recipe

3 pounds Chicken
2 cups cooked rice
1 cup diced celery
3/4 cup mayonnaise
1 can cream of chicken soup
1/2 cup slivered almonds
3 Hard boiled eggs -- chopped
1 2 ounces jar pimentos -- chopped
2 tablespoons green pepper
2 tablespoons chopped onion
1/2 cup dry bread crumbs -- up to 1

Simmer chicken in water till tender, cool in bath. Cut chicken in cubes.
Mix with rest of ingredients except bread crumbs.

Pour into buttered 12x8x2 baking pan.

Sprinkle with crumbs.

Bake at 350 degrees for 45 minutes.

Cut in squares.

Delicious and better 2nd or 3rd day.



2 Hot Chicken Salad Chicken Recipe

4 cups chicken -- cooked and diced
4 Hard cooked eggs -- diced
3 cups celery -- diced (loosely
-- packed)
2 cans mushrooms -- (4 oz.)
1 5 ounces can water chestnuts -- sliced
1 2 ounces jar pimientos -- cut fine
1 tablespoon grated onion
2 tablespoons lemon juice
1 teaspoon salt
1/2 teaspoon Accent
2 cups sour cream

Combine all ingredients in large bowl and let stand several hours or
overnight in the refrigerator.

Just before putting in oven, add 1 Cup mayonnaise. Mix well.

Place in 8x12x2" flat baking dish.

Top with 1 Cup crushed potato chips and 3/4 Cup grated cheddar cheese and
sprinkle with paprika.

Bake in 350 degree oven for 30 minutes or until bubbly and heated
through.

Serve in squares and garnish with parsley.

Serves 8 - 10.




Hot Chinese Chicken Salad Chicken Recipe

8 Broiler-fryer chicken thighs -- skinned, boned, cut
-- into 1" pieces
1/4 cup corn starch
1/4 cup corn oil
1/8 teaspoon garlic powder
1 large ripe tomato -- cut into chunks
1/3 cup sliced water chestnuts
1 can sliced mushrooms -- drained (4 oz.)
1 cup coarsely chopped green onion
1 cup slant sliced celery
1/4 cup soy sauce
1 teaspoon salt
2 cups finely shredded lettuce
Rice

Roll chicken in corn starch.

In skillet heat corn oil over medium heat. Add chicken; quickly brown.
Sprinkle with garlic powder.

Add next 5 ingredients.

Sprinkle with salt.

Stir in soy sauce.

Cover; reduce heat and cook 5 minutes or until vegetables are tender
crisp.

Lightly toss with lettuce.

Serve hot with rice.




Hot Stuffed Florida Avocados Chicken Recipe

3 ripe avocados
6 tablespoons lime juice
6 cloves garlic
2 tablespoons flour
1 cup light cream
1 tablespoon onion -- grated
1/4 teaspoon celery salt
2 cups cooked chicken -- chopped
salt and pepper -- to taste
1/2 cup cheddar cheese -- grated

Cut avocados in half, remove pits and place 1 tablespoon lime juice and a
clove of garlic in each half. Let stand 30 minutes.
Meanwhile over low heat melt butter and blend in flour. Add light cream
and cook, stirring until thickened. Add onion, celery salt, chicken; salt
and pepper to taste.
Remove lime juice and garlic from avocados halves; fill with chicken
mixture. Sprinkle with grated cheese and place in baking dish. Pour 1/2
inch of water around avocados and bake 15 minutes in 350 degree oven or
until cheese is melted.
